Something I have been trying to do more recently is increase my intake of fruits and vegetables.

We all know how important it is to try and eat a well on a regular basis, and I have to say since finding out I was pregnant in June I have fallen off that bandwagon. I’m only now trying to get back on it.

My first step in doing so is upcoming my intake of greens.

Greens, like broccoli for instance, are chock full of vitamins (such vitamin b and c), iron, folate, magnesium, zinc and potassium. Not only that they are low calorie and offer a great way to help boost your fiber intake. Something that is oh-so-important, especially during pregnancy when your digestive tract is moving slower.


Something I have taken to enjoying for lunch as of late is a simple Cheddar Broccoli Salad. This salad is chock full of Broccoli, Ivanhoe Cheddar Cheese and Craisins, and tossed in a sweet salad dressing. It always makes for a nice and healthy midday pick-me-up. Mind you I am sure only broccoli lovers will agree!


Cheddar Broccoli Salad


  • 4 cups broccoli, chopped
  • 1 cup craisins
  • 1 cup Ivanhoe Sharp Old Cheddar Cheese, shredded
  • 1 cup mayonnaise
  • 1/3 cup sugar
  • 2 tbsp pure white vinegar


  1. In a small bowl, combine mayonnaise, sugar and vinegar. Mix well and set aside.
  2. In a salad bowl, combine broccoli, craisins and cheese. Mix in salad dressing. Stir well to combine.
  3. Refrigerate salad for a few hours to chill before serving.
