When it comes to the dinner hour, time is hardly in my favour. Quite often I will find myself flocking to picking up takeout just to avoid the stresses of preparing a meal while the baby fusses in the carrier and my preschooler clings to my leg wanting all of my attention drawn to him. It is funny how the dinner hour always seems to bring out this side to children.

Over the past two weeks, I have slowly eased back into the realm of meal planning. It certainly hasn’t been an easy journey, but I have found that few things have made the transition easier.

Each week I try to plan meals that include similar ingredients. For instance, last week each meal that I planned was based around chicken and Blue Dragon Canada products.

I aimed to plan meals that take no longer than 20 to 30 minutes to whip up. One pot meals are great for this, as are slow cooker dishes.

To preoccupy the children as I cooked dinner, I would turn on my MP3 player and crank up some of our households favourite top 40 songs. Impromptu dance party, anyone? It’s a great way for the kids to sneak in a little physical activity. It keeps them busy, happy and out of my hair, as I work frivolously in the kitchen to get dinner ready and on the table. My 3 month old is a huge fan of this too. She could sit in her bouncer chair for hours watching her older siblings goof around.

One of the dishes that I whipped up last week that was a huge hit was Cashew Chicken. It incorporated a tantalizing authentic Eastern flavour using Blue Dragon Canada products in a popular Chinese-American Dish that left my family begging for seconds.

Cashew Chicken
Ingredients

3 boneless skinless chicken breasts, cubed
4 cups broccoli florets, raw
1 small yellow onion, diced
11/2 cups low sodium chicken broth
1 cup roasted cashews
1/4 cup brown sugar
2 tbsp soy sauce
1 tbsp BLUE DRAGON Hoisin Sauce
1 tbsp minced garlic
1/4 tsp crushed red pepper flakes

1/4 cup water
2 tbsp cornstarch

BLUE DRAGON Rice Noodles

Directions

  1. Cook chicken until no longer pink.
  2. Add onion, broccoli, chicken broth, cashews, brown sugar, soy sauce, hoisin sauce, minced garlic and red pepper flakes to the pan. Bring to slow boil. Cook until broccoli is tender. About 8 minutes.
  3. In a bowl combine water and cornstarch, and slowly stir into the cashew chicken on the stove top. Simmer until thickened.
  4. Serve over rice noodles.

Modifications

I can appreciate how often time may not be in your favour during the dinner hour. If you don’t have time to prepare the sauce, you can prepare a quick sauce for your Cashew Chicken by using a package of Blue Dragon Honey Teryaki Stir Fry Sauce, 1 tbsp of soy sauce and 1/4 tsp of crushed red pepper flakes.

    I made this dish last week too, but yours looks better than mine, hmmmm wonder what I did wrong, but it sure did taste good though which is a good thing..lol
