As of late I have been very indecisive when it comes to food. I never know what I want. Nothing jumps out at me or sounds appealing. I can’t even begin to tell you how many times my husband has offered to grab take-out and even deciding where to order from has become a task.
However when a craving strikes (which is rare), it must be satisfied immediately.
Today was one of those days when the mood struck.
It was 45 minutes until the lunch hour, and I had to have eggs. Oddly enough eggs has been one of those foods that has been very hit and miss during this pregnancy. Eggs generally always sound good to me at the time, but once stomached they just don’t settle and I end up running for the kitchen sink or bathroom (where ever I can make it first). Except for the rare few occasions when they actually settle.
Today I didn’t just have a hankering for eggs for lunch, but also sriracha. Have I mentioned I have never tried sriracha before?!? Yeah. I haven’t. However, I have heard my husband rave about it often!
So for lunch today I decided to whip up a quick and easy Sriracha Egg Salad Sandwich. The egg salad can easily be served upon bread, a bun, tortilla or as a lettuce wrap. Whatever tickles your fancy.
I should warn you though! They’re addictive.
Sriracha Egg Salad Sandwich
- 4 eggs (hard-boiled)
- 2-3 tbsp of Calorie-Wise Miracle Whip
- 1 tsp Sriracha sauce
- 1/4 tsp garlic powder
- 1/4 cup celery, diced
- 1/4 cup sweet red bell pepper, diced
- Salt & pepper (to taste)
- Using a fork mash the hard-boiled eggs in a bowl until chunky.
- Add in Miracle Whip, Sriracha Sauce, garlic powder, salt and pepper. Stir.
- Add in celery and sweet red bell pepper. Mix well.
- Serve on bread, a bun, tortilla or in a lettuce wrap.
