It’s Friday! Finally! It felt like Friday should have been 3 days ago, but alas it wasn’t. This quite possibly felt like the longest drawn out week that I have experienced in, well, ages! It probably didn’t help that my two year old son is going through a nap regression. Gone are the days of quiet  afternoons while I sit and relax with a hot cuppa! Ah well – it could be so much worse, right?!

I always look forward to Friday nights. My husband and I date at home each Friday (unless other plans unravel). It’s a nice opportunity to focus on our relationship and bond. After the kids go to bed our devices go offline (yes, that means I have to step away from social media for a few! A travesty, I know!), music gets cranked, and we spend hours in the kitchen chatting and cooking together. It’s delightful. Tonight will be no different!!

Each week we try to experiment with new dishes. I’m trying to get my husband to step out of his comfort zone of being a picky eater! The guy who once lived on plain jane chicken breasts with a side of peas and corn… Now actually enjoys things like Honey Sesame Chicken, Coq au Vin, Shrimp Creole… You name it!

A date night just wouldn’t be kicked off on the right note if an appetizer wasn’t nibbled on. Don’t these Korean-inspired Deviled Eggs from Food Prints look every little bit of wonderful. My husband loves eggs, and I know for damn sure I would win the wife of the evening award if I prepared him these!

While you’re enjoying a nice glass of bubbly while nibbling on your appies, you can begin to prepare the main course. A Pretty Life features a delicious recipe for Coconut Lime Thai Chicken. What’s wonderful about this recipe is that you can let it sit in the marinade all day, and pop it in the oven when you’re ready, and serve over a jasmine or brown rice. Easy peasy lemon-squeezy!

A dinner date at home wouldn’t be wrapped up without a little dessert. I’m a sucker for any pastry-filled desserts that contain Apple… so this Apple Galette featured on Kitchen Counter Chronicles screams out at me.

The morning after a date night at home we like to kick off with a good old fashioned family brunch! Doesn’t this Rice Krispie French Toast featured on Life in Pleasantville sound wonderful?! It looks decadent, and oh-so-delicious! Candied Rice Krispies, French Toast, and Caramel Topping? Yes please!!
