It’s been a week full of experimentation in the kitchen. I have been trying many new recipes. Aiming to shake things up just a tad. I love introducing my children to different dishes. They never have the same meal for dinner twice within a month. I would prefer to keep it that way. It helps keep them open-minded and willing to try new foods. I can’t say that they particularly enjoy every meal I put in front of them, and that’s perfectly fine. At least they are trying new foods. Expanding their pallet. That’s what matters most to me.

One of the more common meals to frequent our meal plan rotation is tacos. My children love (and I mean…. loooovvvveeee) tacos! If they could eat tacos every day of the week, they totally would. Give them tacos or a bowl of ketchup and their hearts are screaming in delight. While I enjoy eating tacos too, I don’t enjoy eating them regularly. It may be an easy meal to prepare, but I easily tire of them. So recently when I came across a recipe on Pinterest for Mini Mexican Pizzas – I couldn’t pass up the opportunity to make them… and STAT!!

Tonight we enjoyed these Mini Mexican Pizzas. If you love burritos, tacos and pizza… you will love this meal! It’s the perfect pairing with the right amount of kick and spice.

Taco Pizza Bites
1-lb ground turkey (browned and crumbled)
1 cup of salsa
1 cup of refried beans
1 cup of Tex Mex shredded cheese or 1/2 cup of  shredded Monterrey jack cheese and 1/2 cup of shredded cheddar cheese
4 tsp taco seasoning
8 large soft tortillas
Taco or Enchilada Sauce (optional)

Preheat your oven to 425F.

Combine crumbled ground turkey, salsa, refried beans and taco seasoning in a bowl. Mix well.

The refried beans you purchased should have come in a can. Take the empty can to cut out small round tortillas. Each large tortilla should make 4 small rounds.

Grease two 12-cup muffin pans. Gentle press the tortilla rounds into the tins. Top each tortilla with 1 tablespoon of the meat mixture. Top each Taco Pizza Bite with cheese.

Bake for 12 to 15 minutes. Remove from muffin tins and let stand for a few minutes on a baking sheet before serving.

For extra flavour, you can drizzle each Taco Pizza Bite with taco or enchilada sauce upon serving.
