If I could eat dessert for breakfast daily without caking on the extra pounds and calories. Trust me, I would! Dessert really should just not involve calories period. Sadly that is not reality.

This morning I had a breakfast that reminded me much of an apple pie. Only it wasn’t. It was healthier and more substantial. I quite enjoyed it and thought you might too!

“Apple Pie” Breakfast Quinoa
3/4 cup of water
1/4 cup of quinoa
1/2 to 1 tbsp of maple syrup
1 tsp pure vanilla extract
1 Macintosh Apple (peeled and cubed)
handful of raisins

Bring water to boil.
Add the quinoa, maple syrup, vanilla extract, apple and raisins to the boiling water.
Simmer until the liquid has absorbed. Approximately 15 to 20 minutes.
Let stand 5 minutes and serve.

    I have a bad of quinoa in my pantry that my mother in law gave me but have yet to try it. This looks like a tasty recipe to finally try it out with!

    Your recipes always look delicious! This is another that I’ll have to try. I better get on trying some of these recipes…my list of ones to try keeps getting longer!

    I love how simple this is. Breakfasts are meant to be easy. My toddler would probably even try eat this. Pinned it.

    Love it! Quinoa is one of our favs! I had never thought to have it as a breakfast dish! I’ve only ever made Quinoa salads! Now that I think of it, why not? So much you can do with Quinoa! Thanks for sharing this!
