This post is coming at’cha a little bit later than normal today! I had a very fun weekend with a bunch of my lady friends. To say I haven’t been feeling just a little bit rough over the past 24-48 hours would be a total understatement. Staying up until 4AM and drinking like a college student just isn’t for this Momma anymore. Although… that one night of drunken debauchery at my BFF’s bachelorette party on Saturday was totally worth the hangover and exhaustion! Every Mom deserves a night to let loose every once in awhile. Am I right? Or… am I right?

Today has been quite mellow. I’ve been rocking PJs and enjoying movies on the couch with my little snugglebugs. My intention was to sneak in a nap this afternoon, but I missed out on that opportunity when the construction workers bombarded on my house to do some work. Ah well. 

Dinner tonight was quite simple. I made Feisty, Frugal & Fabulous’s Hamburger Potato Casserole. It definitely wasn’t a favorite, but it did the trick and filled our bellies. If I happen to make this recipe again, I think I’ll omit the celery.

The meals planned for the remainder of this week include:

  • Chicken Parm Pasta Toss
  • Stuffed Pepper Stoup
My kitchen is complete chaos right now… so I’m really not into having to cook homemade meals. I’m pushing through and sticking it out though. Hopefully the builders will get everything sorted out soon, so my home life can return to some level of normalcy!

    It’s great to rock pj’s and relax once in a while! Especially for us mamas 🙂 You’re right, you do deserve a night out to have fun once in a while! We’re having a turkey dinner tonight in honour of what would have been my Grandma’s birthday (and turkey was her favourite), so it’ll be a regular old feast on a Tuesday here! 🙂 Sounds like you did great despite the chaos 😉

    I make a similar casserole to that but I have to admit I like my recipe better. There is no celery and no onion soup mix. I use shredded carrots as a thin layer to get veggies in (and they seem to go unnoticed!) I also prepare the mushroom soup as per the can instructions or use ready eat mushroom soup. Otherwise it’s the same.

    Chicken Parm anything would be a winner in my books! Then again, hamburger anything would also work…
