Meal planning seems to have gotten a heck of a lot easier since I made the decision to scale back how many meals I make each week. This transition hasn’t been an easy one for me. I was so used to making a meal big enough to feed 8 each night. Seldom would we embrace leftovers or freeze them. It was quite wasteful.
Last week was the first week of this new shift. We did pretty well overall. We did slip up and buy take out a few nights. However, we opted for healthier choices as opposed to McDonald’s. Takeout still doesn’t make up for falling off track. We’re working on it though.
Hopefully this week we can stay a little more focused and on track. No one said meal planning would ever be easy. It’s far from it. At least for me it is…
Monday: Crock Pot Parmesan Garlic Chicken with Orzo
Tuesday: Creamy Avocado Pasta
Thursday: Healthy Carbonara
Saturday: Jalapeno Popper Buffalo Chicken Mac & Cheese (we were meant to make this last week, but ended up having a last minute date night instead).
Sunday: Not sure yet…
