It’s Christmas Eve. The big man in red comes tonight. Not only that, but it’s also marks the end to our week of Christmas morning breakfast ideas.

The recipe I’m providing you with today is not a make ahead meal. You can do a lot of the prep work the night before. While your hubby prepares the morning coffee, you can quickly throw the breakfast together and get it in the oven. It’s timeless! 
Spanish Tortilla

8 eggs
1 tsp (5 mL) dried oregano leaves
1 tsp (5 mL) paprika
1/4 tsp (1 mL) cayenne (optional)
1 small red pepper, chopped
1 green onion, thickly sliced
1 cup (250 mL) each chopped ham and frozen hash browns
1/2 cup (125 mL) grated cheddar or manchego cheese


Preheat oven to 350F (180C). Lightly coat an 8-in. (2-L) baking dish with vegetable oil. In a large bowl, whisk eggs with seasonings. Stir in pepper, onion, ham, frozen hash browns and cheese. Turn into baking dish and stir to evenly distribute ingredients. It will look chunky.

Bake, uncovered, in centre of oven until centre is set when dish is jiggled, 30 to 40 min. Let stand 5 min, then slice.
