Last night I made an Enchilada Layer Bake. I’ve wanted to make enchiladas for the longest time. I just never got around to it. When I came across this particular recipe… I couldn’t pass it up. It was easy and sounded delicious. If you plan to make this dish… I would suggest preparing it the night before. It does require some prep work. I would allot 20 to 30 minutes for prep.
I’m a huge fan of food with Mexican or Spanish flavor. Something about these types of dishes make my tummy smile. If you love Mexican inspired dishes, then this one is a must try!!
12-14 small flour tortillas
1/2 lb. ground beef, seasoned, browned and drained
1 can black beans, drained
1 jar salsa
1 can Enchilada Sauce
2 cups Shredded Cheese
1/2 tsp. Salt
1/2 tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
1/2 chili powder (depending on how spicy you like things!)
Spray crock pot with non-stick spray.
Brown ground beef with onion powder, garlic powder, chili powder, salt and pepper. Drain off fat.
Line bottom of crock pot with tortillas. You may need to cut some in half. I used 2.5 to 3.5 per layer. Next, spread 1/3 of the ground beef, 1/3 of the black beans, 1/3 of the salsa, 1/3 of enchilada sauce and 1/4 of the shredded cheese over the bottom layer of tortillas.
Make two more layers just like this. Just try to set aside some enchilada sauce for the top layer.
To finish off, add in one more layer of tortillas. Drizzle the remaining enchilada sauce over top and sprinkle with cheese.
Cook on low for 6 hours.
You could easily add corn or other beans to this meal.
