Postpartum cravings? Is there even such a thing? I’d like to believe there is. Since giving birth to Cameron – oh 10 months ago – I’ve had wicked cravings for anything and everything buffalo chicken. Seriously the words buffalo chicken are enough to make my tummy smile and grumble with anticipation of something deliciously good!

We had a homemade pizza for dinner tonight. If you ask me… there is nothing better than a homemade pizza. I decided to experiment tonight. I took the plunge and made a buffalo chicken pizza. It was effing amazing! Best damn pizza I’ve ever had.

1 pound chicken tenders, cut into small bite size pieces (I used 3 Janes FlatJacks)
1 cup buffalo wing sauce plus 2 tablespoons
1 can refrigerated pizza dough (I used Pillsbury Pizza Crust)
1 cup ranch dressing
2 cups shredded pizza mozzarella cheese
1/2 to 3/4 cup red onions, sliced

Set oven to 425F. Cut FlatJacks in hot sauce. I dipped each side twice. Cook in oven 10 minutes, flip half way through. Once cooked set aside and cut into bite size pieces.
Lower oven temperature to 400F. Roll out pizza dough on to a baking, coated well in a non-stick spray. Cook pizza dough in oven for 8 minutes. Remove from heat.
Spread the ranch dressing over pizza. Top with pizza mozzarella cheese, red onion and chicken strips. Drizzle pizza with 2 tablespoons buffalo wing sauce. Return to oven and cook for 11 minutes or until crust is golden brown and cheese is  bubbly. I had to add 5 additional minutes to the cook time. Use your judgement, each oven differs.
