Carving pumpkins or squash? Not sure what to do with the goopy gunk and seeds? Set them aside in a bowl. Finish carving your pumpkins, and then make yourself a tasty treat.

Toasted Pumpkin Seeds.

Once you’ve finished carving the pumpkins. Take your bowl of goopy gunky pumpkin seeds to the kitchen. IDump them into a strainer and wash them. Remove all the pumpkin bits and strings. Washing them will help remove the stickiness.
Once they’re washed. Spread them out across several baking sheets and let air dry.¬†

Once the seeds have dried out. Return them to a mixing bowl. Heat the oven to 300 degrees¬†Fahrenheit. Lightly coat the seeds in EVOO. Sprinkle them with seasoning salt, garlic powder and ground cayenne pepper. Don’t overdo the EVOO or seasonings. How much you use depends on how many seeds you have. In my case I used between 1 to 2 tbsp EVOO and about 1/8 to 1/4 tsp of each spice. Use your judgement. Just don’t overdo it.

Evenly spread out the coated seeds on a baking sheet and place in oven. Cook for 30 to 45 minutes. Flip and move around the seeds every 5 to 10 minutes.

Once you notice the seeds have a very nice golden brown colour. Remove and let cool. Seal in a air tight container.

    I love to roast pumpkin seeds too and of course enjoy as a snack!
