My grandmother came up with the recipe for Beer & Beef Stew in the 70’s. It was always one of my grandfather’s favorite meals. He took comfort in a bowl of it on a cold winter night.
In 2008, my grandmother decided to pass on her recipe to me. She understood my love for cooking, and knew of my love for beer. This meal was one that I craved often during my pregnancy with Cadence. It’s that good.
1 Tall Can of Beer (I used 2 bottles of Coors Light)
1 cup onion (chopped)
1 cup carrots (chopped)
1 cup fresh mushrooms (halved)
1/2 cup celery (chopped) (optional)
1 cup potatoes (cubed) (optional)
2 lbs stewing beef (cubed, 1-inch)
1 tsp sugar
1 tsp salt
1/2 tsp ground black pepper
2 tbsp vinegar
2 tbsp flour
1 bay leave
Mix spices, beer and vinegar. Pour into crock pot. Add in veggies. Coat cubed, raw beef lightly in flour. Add to crock pot. Stir gently.
Cook on low 7 to 8 hours.
This meal is great served alongside bread and butter and/or fresh salad.
This meal can also be cooked in a dutch oven. Cook for 2 to 2 & 1/2 hours at 350 degrees.
