If you are looking for a quick and easy meal to throw together, this one is for you. It has minimal ingredients. It’s super easy to make, and it doesn’t require you to slave over the stove.

This meal does have a bit of kick, but not too much kick that I wouldn’t serve it to my youngsters.

1 lbs bonesless skineless chicken breasts
Knorr Ranch Mix Packet
Taco Seasoning Packet (I made my own taco seasoning – see below)
Can of Black Beans (drained and rinsed)
Can of Cream of Chicken Soup
1 cup Salsa

Rice (I made 2 cups)

Place chicken at bottom of crock pot. Sprinkle ranch mix and taco seasoning over chicken. Mix soup, beans and salsa. Pour over chicken. Cook on low 7 hours. Shred chicken once cooked and mix into sauce.

Serve over rice.

If you don’t have cream of chicken soup handy substitute with cream of mushroom soup.

I like to make my own taco seasoning. It saves me spending extra money on the packets.

To make taco seasoning mix together:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

    This is much healthier if you omit the ranch mix and cream of chicken! I’ve been making a similar version for years: 4 chicken breasts tossed in taco seasoning, add 2 cans each black beans and whole kernel corn, strained/rinsed. Pour an entire jar of medium salsa on top and slow cook. Great served in soft taco shells or with tortilla chips. I like to shred cheeses, green onions, etc as optional toppings as well. Great recipe : )
