I’m a huge lasagna lover. Very seldom do I make it. I find it takes up too much time, and with two young children running around time is something that is very sparse these days.

Last night I threw together a lasagna soup (also known as lazy mans lasagna). It was quick and easy. The prep work was timeless. Perfect for a day when you don’t have much time to cook, especially Halloween night.

1lb ground beef (raw & crumbled)
28oz can diced tomatoes with italian seasonings
2 cups chicken broth
2 cups beef broth
1 can condensed tomato soup
1 can tomato sauce
1/2 tbsp club house garlic plus seasoning
1/2 tsp herbs
1 tsp salt
1/4 tsp ground black pepper
330g light ricotta cheese
8 to 10 lasagna noodles (broken into pieces)

Add broths, tomato soup, diced tomatoes, tomato sauce, seasonings to crock pot. Crumble in raw ground beef. Cover and cook for 7 to 8 hours on low.

During the last 30 to 60 minutes mix in ricotta cheese and lasagna noodles. I added 10 lasagna noodles because we prefer chunkier soups. This makes for more a lazy man lasagna. If you’re not looking for something chunky add in less noodles.

Serve and top with shredded mozzarella cheese (optional).

    When you mix in the noodles, are they raw or cooked?

      During the last 30 to 60 minutes you add in the uncooked lasagna noodles.
