12 days!!! That is how long I have until my older two children head back to school! Not that I am counting or anything. Seriously, I am not.
Ok… Well, maybe I am… Not because I want them to head back to school, but rather because I am craving the return to routine. My family lives for routine and structure.
We have had a lot of fun this Summer. Between Wonderland trips and a week at the cottage, it has been a Summer to remember. That being said we have also had a lot of downtime at home. With an infant in tow and a daughter on modified bed rest there hasn’t necessarily been a heck of a lot to do.
Rather I have spent a lot of my days bouncing the baby in the carrier while pacing the house. I have clocked a fair amount of mileage. I have also used this time to get creative in the kitchen. Trying out new recipes. There is nothing I love more than testing out new quick and easy lunch recipes that are kid-friendly, but not only that… They can be used for school lunches!
As a Mom of 4, I dread making school lunches. Heck – don’t we all? I mean the first few weeks of the new school year we’re all like, “Yes, I got this! This year I will make spectacular healthy meals for my child to take to school everyday!” and then you reach the point of not wanting to do it.
I have the hope that this year I can come up with a variety of different sandwiches that the kids like. This way they can rotate through them week in and out, helping to decrease the risk of a sandwich recipe growing old.
With keeping staple ingredients like Summer Fresh Hummus and Dips in our house we are able to ensure that each sandwich can boast a unique flavour while also remaining healthy.
What’s better than being able to whip up a simple, healthy sandwich in less than 5 minutes?! Umm… Nothing!
So if you are gearing up for your kids to head back to class soon (like I am). Aim to keep school lunches healthy, fun & interesting by whipping up this Creamy Hummus and Turkey Sandwich Recipe. It’s guaranteed to be a lunch so tasty that the kids won’t want to trade!
Creamy Hummus and Turkey Sandwich Recipe
- 4 slices of thinly sliced turkey deli meat
- 5-6 thin slices of english cucumber
- 1 slice of swiss cheese
- 1 tbsp Summer Fresh Roasted Red Pepper Hummus
- 1 tsp whipped dressing and / or 1 tsp honey dijon mustard (Personally, I like to use both or if you like a bit of kick eliminate these ingredients and add Sriracha Mayo instead)
- 2 slices light rye bread
- Spread the hummus on one slice of rye bread.
- Top with swiss cheese and cucumber slices.
- Fold turkey slices in half and layer on top of cucumber.
- On other slice of rye spread your whipped dressing and / or honey dijon.
- Place on top of sandwich. Halve and enjoy!
