It has been a week since I jumped back on the meal planning bandwagon, and I have to say it is going rather well. Better than I honestly thought it would be.

You see I suffer from horrendous all day sickness. Quite often I feel like eating nothing at all. Honestly, if I could just live solely on Kelsey’s Spinach Dip with Fried Pita Bread for the next 4 months, I would. That’s not practical though. Nor would it be good for the waist line.

My biggest hurdle is finding meals that will settle and that I know I will enjoy. Carbs always seems to be my safe bet. Even better if the meal is full of carbs and a bit of heat.

The meal that was a huge hit in our home last week was the Creamy Shrimp Tomato Basil Pasta and the Slow Cooked Brandied Beef & Mushroom Stew with Whipped Mashed Potatoes.

In sticking with the theme of carbs this week, our meal plan includes:

Again, the plan is to spread this meal plan across two weeks. As you will notice, this meal plan does carry over some of the meals from last week that I have yet to cook.

I find by planning out enough meals to cover off two weeks allows me the leeway to be picky about what foods I eat and when. It also ensures that all the ingredients for the recipes eventually get used without being tossed in the garbage.
