This past weekend was the epitome of a staycation for our family. We made a point to get out of the house each day and check out many of the awesome attractions that we are so fortunate to live quite close to. It was a great opportunity to begin knocking off items from our family summer bucket list.

Something I have always wanted to do is go Strawberry Picking. I never had the pleasure of doing this with my parents when I was a child, but it has always been something that I have looked forward to doing with my kids.

After visiting with out buddy, Optimus Prime, on Saturday morning… we ventured over to a local farm to pick some delicious Ontario strawberries. I am not sure who was more excited about this outing the kids or myself.

Upon arriving home, my daughter made mention that we just had to make a batch of Strawberry Jam. I wasn’t quite sure that I was up to the daunting task. After all making jam is hard, right?! I couldn’t have been more wrong. A quick Google search proved that. I pulled from a bunch of recipes, and created my own version of a crock pot strawberry jam.

{Small Batch} Crock Pot Strawberry Jam

Ingredients

  • 3.5 cups of sliced strawberries
  • 1 Empire Apple (peeled and sliced in to small chunks)
  • 2/3 cup of granulated sugar
  • 2 tbsp lemon juice

Directions

  1. Place all ingredients in crock pot. Stir to coat all ingredients. Cook on low 2 hours. Stirring as each hour passes.
  2. After cooking on low for 2 hours, turn crock pot to high. Mash the strawberries, and continue to cook 2 to 3 hours until the jam has reached your desired consistency. (You can test the viscosity of your jam by spooning a bit of the jam on to a cold plate, and placing in the fridge for 10 minutes.)
  3. Can and cool in a large mason jar.
