School is officially out for Summer. The school year went out with a bang. My daughter wrapped up her first year of Kindergarten, and walked away from it all with a lifetime of memories, new friends, good grades and the Perseverance Character Development Award. I couldn’t be more proud.

With the end of the school year follows the actual kick-off to Summer… The Canada Day long weekend. I couldn’t imagine a better way to bid adieu to months upon months of  homework, than enjoying a relaxing weekend with the family at a cottage or just touring local tourist attractions.  My family opted for the latter.

Over the past few days we have enjoyed visiting local attractions and hidden town gems (ahem… Optimus Prime). We surely have had a blast taking in all that our beautiful town has to offer, coming  to cool off pool, enjoying a quick home-cooked meal and wrapping the whole day off with s’mores around the fire.

One thing we have managed to stay clear off this weekend is ordering take-out for dinner. Shocking for our little family, I know. We have Kraft Food Hacks to thank for that.  Between Foil-Pack Bruschetta Chicken and Fish ‘n Chips with Twist, we have been able to ensure dinner is on the table in a matter of half an hour while also eliminating the need for tons of prep, making the clean up afterwards painless.

Normally my husband doesn’t enjoy meals that include fish as the main ingredient. He quite enjoyed these fish ‘n chips. The photo I have included below really doesn’t do the meal justice.  I encourage you to make it and try it for yourself – you won’t be disappointed. I can assure you.

Fish 'n Chips with a Twist

Fish ‘n Chips with a Twist

Ingredients

  • 2 cod fillets
  • 1 cup crushed kettle cooked salt & pepper chips
  • 1/4 cup Miracle Whip with Olive Oil Spread

Directions

  1. Preheat over to 450F.
  2. Coat fillets with Miracl Whip and dip in crushed kettle cooked chips to coat.
  3. Place on a parchment paper lined baking sheet, and bake for 20-25 minutes.

See what I said about easy and painless?! This meal would plate nicely alongside salads or Grilled Corn on the Cob.
