The holidays are just around the corner, and this means I am now in baking and decorating mode. If I had my way I would decorate on November 1, but I always make a point to hold off until after Remembrance Day.
This morning I found myself in the kitchen whipping up one of my favourite holiday cookie recipes… Cranberry-Cherry White Chocolate Cookies. This recipe is a cross between two of my favourite cookies: Kris Kringles and my Grandmother’s Fruit Cookies.
These cookies have always been a hit among my family. You can always find them served at all our holiday gatherings. Not only that they are the perfect cookie to pass out at a cookie exchange. I have even been known to stick them in the freezer. Trust me – it is hard to stop at just one of these cookies once you have indulged!
Preparing these cookies are quite simple.
Start by preheating your oven to 350F.
Cream 1/2 cup of shortening and 1 cup of brown sugar.
Add 1 Burnbrae Farms Shell Egg.
Followed by 1/2 a cup of dried cranberries and 1/2 a cup of halved, glazed red cherries.
In a separate bowl sift together 1 tsp of cinnamon, 1 & 1/2 cups of flour, 1 tsp baking soda, and 1/4 tsp salt.
Combine with the wet ingredients.
Add 1 tsp of vanilla extract, 1/2 a cup of egg nog and 1/2 cup of white chocolate chips. Mix well.
Grease several cookie sheets with butter or a non-stick spray.
Dollop spoonfuls of the batter across the cookie sheets.
Bake for 12 to 15 minutes.
Cranberry-Cherry White Chocolate Cookies
- 1/2 cup shortening
- 1 cup of brown sugar
- 1 Burnbrae Farms Shell egg
- 1/2 cup red glazed cherries, halved
- 1/2 cup dried cranberries
- 1 & 1/2 cups flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup egg nog (see notes below to find out how to make your own)
- 1/2 cup of white chocolate chips
- Preheat oven to 350F.
- Cream shortening and brown sugar.
- Add 1 Burnbrae Farms shell egg, 1/2 cup of glazed cherries (halved) and 1/2 cup of dried cranberries. Combine.
- In a separate bowl sift together the flour, salt, baking soda and cinnamon.
- Add dry ingredients to the bowl of wet ingredients. Blend.
- Add vanilla extract, egg nog and white chocolate chips. Mix well.
- Grease a few baking sheets. Dollop the cookie batter on the baking sheets. Be careful not to place the batter too close, as these cookies expand rapidly.
- Bake for 12 to 15 minutes.
