Those who know me know that I’m a huge cheese lover. I love to have it as a snack, on sandwiches, spreads, and even include it in my main dishes. So when I started dating my husband 11 years ago I was in for a shell shock when I learned that he did not share the same love for cheese that I do. Heck at the time he went as far as claiming that he hated cheese. How could someone hate cheese? The concept was foreign to me. As time went on he slowly began to admit that maybe he didn’t hate cheese, but rather that he never really had the chance to enjoy it during his childhood and adolescence. It just wasn’t something that his family traditionally included in their dishes or put out as a snack. He wasn’t accustomed to it. So I made it my mission over the years to have him try many variations of cheese. He slowly, but surely has come around.
Many of the dishes I cook for my family include cheese as an optional ingredient. My husband quite enjoys a cheesy pasta bake or shreds of cheese on a bowl of homemade chili. Whereas I as of late have had huge hankers for all things Macaroni & Cheese. There is just something about a big ol’ bowl of macaroni & cheese that just warms the mind, body and soul. It’s my absolute favourite comfort food.
So when I received this huge shipment of Bothwell Cheese to give a whirl. I was excited!
For my daughter’s 4th birthday we held a family barbecue in celebration. I put out a spread of some of the Bothwell Cheese as an appetizer. Guests really enjoyed the kick of the Red Hot Chili Pepper Jack and Jalapeno Pepper Jack. While I quite enjoyed the Red Wine Old Cheddar. The Red Wine Old Cheddar brings together two of my favourite things that I don’t quite get to enjoy all that often these days: wine and cheese! The perfect pairing.
Lastly, you can bet your bottom dollar that I whipped up a homemade mac and cheese being that I had (and still have copious amounts of) cheese in my house for our enjoyment. The mac and cheese I whipped up was inspired by a recipe I came across recently on All Recipes. I modified the ingredients to suit our taste, and of course added more cheese!!
Oven Baked Macaroni & Cheese

- 1 box Elbow Macaroni
- 1/4 cup Butter
- 1/4 cup All-Purpose Flour
- 1/4 teaspoon Cayenne Pepper
- 1/8 teaspoon Black Pepper
- 1/4 teaspoon Mustard Powder
- 1/4 teaspoon Italian Seasoning
- 1 pinch Nutmeg
- 1 teaspoon Salt
- 1 teaspoon Dijon Mustard
- 1/2 teaspoon Worcestershire Sauce
- 3.25 cups Bothwell Cheese Old Cheddar Cheese
- 1/2 cup Bread Crumbs
- 1 tablespoon Butter (melted)
If you are looking for a twist you could top the casserole with a mixture of shredded Bothwell Jalapeno Pepper Jack, Smoked Mozzarella and Old Cheddar Cheese to add a bit of kick.
|Preheat oven to 400 degrees F (200 degrees C).|
|Bring a large pot of water to boil. Once water is boiling stir in macaroni contents. Boil until al dente. Drain. Set aside.|
|In a pan, melt 1/4 cup butter over medium heat. Once the butter has melted, stir in the flour and continue to cook for 3 to 4 minutes until the flour turns a pale yellow.|
|Add italian seasoning, cayenne pepper, dried mustard powder, Cook for a minute.|
|Whisk in one cup of milk and whisk until the mixture has smoothed before pouring in the remaining 2 cups of milk. Once all the milk has been mixed into the pan bring the sauce to a simmer.|
|Add in nutmeg, worcestershire sauce, and salt. Simmer the sauce on medium-low until thickening. Be sure to whisk often.|
|Once the sauce has thickened, remove pan from heat. Add 2 3/4 cups of cheese and dijon mustard. Stir until well combined.|
|Transfer macaroni to a casserole dish and mix well with the cheese sauce. Mix bread crumbs with a tablespoon of melted butter, and top the macaroni with the bread crumbs. Followed by the remaining 1/2 cup of cheddar cheese.|
|Bake in the preheated oven until bread crumbs and Cheddar cheese topping are golden brown, about 20 minutes.|
