Mother’s Day is around the corner! How do you plan to celebrate it?
This year, I’m lucky enough to be getting to spend Mother’s Day in beautiful Niagara Falls with my family. However, if I was spending the occasion at home there would be nothing that I would want more than to be spoiled with breakfast in bed. Heck, I’ll probably still enjoy breakfast in bed on Mother’s Day at the hotel.
I have enclosed a recipe below for Baked Egg Cups. It’s a quick and easy breakfast that the kids and Dad could whip up for Mother’s Day brunch!!
Baked Egg Cups
6 thin slices ham
18 baby spinach leaves
6 tsp crumbled goat cheese
6 tsp milk (1%)
2 tsp finely chopped chives
1/8 tsp black pepper
