I’m sitting here sipping my tea, and mapping out my meal plan for the next week or so. Meal planning is something I quite enjoy. It gives me the chance to scope out new recipes that I may have not otherwise known about. This week meal planning is a bit of treat. I’ll be single parenting for a chunk of it. While it will suck not to have the extra set of hands around to help out over the dinner hour and during the nightly bedtime routine, I look forward to not having to bear in mind the preferences of Mr. Picky-Eater-Himself. The options of what I can prepare for dinners is endless. Oh the possibilities!
Over the next week I have planned the following meals for my family to enjoy:
- Turkey Sloppy Joes
- Slow Cooker Beef Dip
- Beef Enchiladas with Homemade Enchilada Sauce
- Slow Cooker Honey Sesame Chicken
- Macaroni & Cheese Cups
- Slow Cooker Chicken Gumbo
I may not prepare all the meals this week. It all depends on the leftover situation. What I don’t prepare this week carries into the meal plan next week. I like to over plan my weekly meal plan because sometimes I just don’t feel like certain meals. This is what deters me from being tempted to get take-out.
