If I could eat dessert for breakfast daily without caking on the extra pounds and calories. Trust me, I would! Dessert really should just not involve calories period. Sadly that is not reality.
This morning I had a breakfast that reminded me much of an apple pie. Only it wasn’t. It was healthier and more substantial. I quite enjoyed it and thought you might too!
“Apple Pie” Breakfast Quinoa
3/4 cup of water
1/4 cup of quinoa
1/2 to 1 tbsp of maple syrup
1 tsp pure vanilla extract
1 Macintosh Apple (peeled and cubed)
handful of raisins
Bring water to boil.
Add the quinoa, maple syrup, vanilla extract, apple and raisins to the boiling water.
Simmer until the liquid has absorbed. Approximately 15 to 20 minutes.
Let stand 5 minutes and serve.
