When I had originally planned out the Foodie Friday post for this week, the recipe I’m about to share with you was not the original one that I had in mind. In fact, it’s completely the opposite. The initial recipe I was going to share was pasta based. However, tonight I had an amazing dinner and I felt the urgency to share the recipe for tonight’s meal immediately. It was so good!!

This whole weeks meal plan was thrown aloof when I did my weekly grocery shop on Wednesday. I started getting hankerings and inspiration to try other meals. Ones in which I had never made before. I had to forego the usually weekly tacos, and go for something new, delicious and creative!

Tonight we had Homemade Turkey Burgers & Oven Roasted Garlicky Parmesan French Fries. This meal was relatively low calorie, delicious and healthy. It took no time at all to whip up. My only qualm when I was preparing the turkey burgers was that we currently do not have access to a barbecue. We live in a new build and are in the midst of being graded, so we had to tuck our barbecue away for the time being. I wound up cracking out my George Foreman Grill and it did a fine job. It only took longer for the meat to cook. This meal was so worth the wait though.

Turkey Burger
Ingredients
1 lb Ground Turkey
1 tbsp garlic powder
1 tsp salt
1 tsp black pepper
1 medium red onion (finely chopped)
1/2 cup parsley (minced)
Directions
Combine all ingredients in a bowl. Mix well.
Form meat into patties. I ended up with 4 patties. 
Grill over medium-high heat.  Being that I don’t have access to a barbecue at the moment, it took me 30 minutes to grill the burgers on the Foreman Grill. My suggestion would be to watch your burgers as you grill them and be your own judge. When they’re cooked, the exterior of the patty should have a nice golden look to to it.

Top it off with some mozzarella cheese, lettuce, tomatoes, cucumber and fat free mayo.

Oven Roasted Garlicky Parmesan French Fries
Ingredients
4-5 medium white or russet potatoes
3 tbsp olive oil
1 tsp salt
1/4 cup parsley (minced)
1/4 cup parmesan cheese
4 garlic cloves (minced)

Directions
Peel and cut the potatoes lengthwise in to 1/3-inch strips. Soak the strips in water for 10 minutes and then dry the potatoes on paper towel.

Preheat your oven to 425.

In a bowl, toss your potato strips with olive oil and salt. Spread out on two olive oil sprayed baking sheets.

Roast for 50 minutes or until the french fries are golden brown with a bit of a crisp to them. Be sure to flip the fries a few times while they are roasting.

Once ready, remove from the oven and toss the fries in a bowl with your parsley, parmesan cheese and minced garlic mixture. Apply a lid to the bowl. Give the bowl a good shake and serve.

    I love making oven fries but have never done them with garlic and parmesan cheese, the entire meal sounds and looks delicious!

    Yum! I made something similar earlier in the week. I did Apple/Turkey burgers…it was yum!
    I got some nice potatoes, they are some artisan style so I am going to make your roasted potatoes tonight!

    Oh my, I read the title of your post and it made me hungry!! Wow looks like a great recipe. I prefer beef burgers but if I substitute the beef it would work equally as good!

    Wow, this looks amazing. I’ve never had turkey burgers but I am assuming it is so much healthier than hamburgers and I am going to get the ingredients next time I visit the grocery store. They look so good. I love, love, love those fries and that too is going on my list. Thank you. I know we will enjoy this dinner.
