Happy Monday!!! Hope everyone had a fabulous weekend!

My weekend mainly consisted of packing and shopping for window coverings. If shopping for window coverings doesn’t end up in divorce, I’ll say we can make it through anything together. Seriously. Out of every decision for our new build. It’s the window coverings we can’t agree on. There’s always something, right?!

I’ve really been enjoying the summer and not having to spend a lot of time in the kitchen. We’re BBQing more often, using the crock pot on rainy days and prepping a lot of make ahead salads over the weekends. It’s been nice to use that extra bit of time allotted for outdoors to head out for evening family strolls.

Meals you’ll find on this week’s plan are…

  • hamburger and tomato mac & cheese;
  • buffalo chicken pasta salad (leftovers);
  • hamburger hash served over shells; and,
  • southwestern chicken casserole.

    I wouldn’t even dare make an attempt at “group shopping for window coverings”. So brave.

    I love the summer, BBQs and eating all the things that I love with abandon. Canadian winters aren’t good for keeping the weight off.

    *sigh* I need to have a menu plan for the week. I usually know what I’m making ahead of time, but there are days when I don’t. Would be nice to be organized for once! lol

    We finally bought a BBQ this year so we’ve been having more BBQs too. Speaking of which I better go check my food!

    Menu planning is difficult. I’m actually better at it during the winter than the summer months. I keep a lot of homemade and bought stuff like burgers and chicken fingers and pasta sauce handy lol. Toss in a salad and I’m good to go. I do make sure to cook properly 2 or 3 times a week though in the summer.
