The summer is here and I’m sure the last thing on your mind is standing in a kitchen slaving over a hot stove. Let’s face it the summer brings with it patio parties, BBQs and various other “fun in the sun” events that are hard to pass up. When choosing a pot luck dish to serve you want to flock to something that’s quick and easy to make… but will also limit the amount of time you have to spend in the kitchen. The more time outdoors, the better… I say!
Buffalo Chicken Pasta Salad is the “in” dish. It’s relatively easy to make. You can make it as spicy or mild as your taste buds prefer. It’s also the perfect make ahead dish. It’s sure to be a tongue and tummy pleaser that will have all your party-goers flocking for more!
Ingredients

2 boneless chicken breasts (chopped into small cubes or shredded)
1 cup (uncooked) penne or fussili
½ cup (uncooked) elbows (macaroni)
½ cup (uncooked) wagon wheels
1 cup of low-fat ranch salad dressing
¼ cup of Frank’s Red Hot Buffalo Wings Sauce (notthe Original Red Hot Sauce)
1 small red onion (diced)
2-3 celery stalks (diced finely)
Crumbled blue cheese (optional)
Seasoning salt (to taste)
Ground black pepper (to taste)
Directions

First thing this morning, I threw my 2 frozen chicken breasts into the crock and covered them with a bit of Italian Salad Dressing. Cooked for 6-8 hours on low. Removed from dressing, shredded the chicken and let cool. If you don’t have time to use the crock pot, you can always pick up a rotisserie chicken and pull the chicken or cook up the two chicken breasts in the oven and finely chop them.
Cook the 2 cups of uncooked pasta until al dente. In the mean time while the pasta is cooking, dice up your veggies.
Once the pasta is cooked, drain and rinse with cold water. In a bowl combine the ranch dressing and Franks Red Hot Buffalo Wing Sauce (do not use the Original Red Hot Sauce). Stir and taste test. Depending on the spice level you like, you may want to had more of the Buffalo Wing Sauce or the dressing.
Mix the pasta, chicken and diced veggies into the dressing. Season with seasoning salt and ground black pepper to taste. Stir well.
Top with crumbled blue cheese (optional).
This meal would be the perfect accompaniment to the Buffalo Chicken Pizza (click link for recipe).

    Oh yum! I still haven’t made that Buffalo chicken, but so should.
    Is it possible to make this mild by just using a bit of sauce???

      I don’t see why not. Start by using a cup of ranch dressing and just dash in some buffalo wing sauce. Stir and taste test. If you want it more mild, add a bit more ranch dressing. Vice versa, if you want more kick. 🙂
