This is my first full week back at it again since returning from Cancun on March 29. My munchkins were quite under the weather last week, so while I did meal plan… I never really had a chance to document it; Nor were the meals all that healthy. Comfort food at it’s finest. It’s what got us through the trying time. Whatever works, right?!

Easter has officially drawn to end for yet another year. Time to do away with all the sweets and chocolates. Anyone have a sugar hangover today? Surprisingly, I held out from caving in on my desire to indulge. It took willpower, but I did it. My kids on the other hand had a full on sugar coma shortly after waking Sunday morning. The Easter bunny was beyond generous to them.

Our family Easter dinner with my Mom and Nana ended up being postponed. My Nana has ALS and her health has rapidly declined over the last few months. With the kids just overcoming Hand, Foot and Mouth Disease… we just didn’t want to take the chance of my Nana contracting it. I ended up making a turkey for the munchkins, the mister and I to enjoy. It was delicious! We have an absurd amount of leftover turkey.

Today I made a turkey stock and soup for dinner. The other meals on the agenda for this week are stir fry, buffalo turkey lasagna and taco pasta.

      It’s soooo yummy! I normally make it with chicken. I’m sure turkey will taste just as awesome.

      Me too! I always look forward to Easter, Thanksgiving and Christmas… Not just for the family get togethers, but also for the yummy eats.

      Do it! Homemade soups are the best! I think I might make a cauliflower and cheddar soup today. Wasn’t on the plan, but realized I have cauliflower in the fridge that needs cooked.

    Mmm, turkey. Wish I was coming to your place for supper. We have yet to make a big turkey ourselves. My husband is the cook so maybe I will make him do it one day. LOL!
