After a month break from menu planning, my hiatus is finally over. I had originally planned to jump right back into it last week. The stomach flu threw my plans awry.
I’m back. Ready. Feeling better than ever.
I need to get back on track and stay on track. I’ve seen an 8lbs weight loss since Christmas. If that doesn’t keep me accountable, I don’t know what will.
Monday: Slow Cooker Arroz Con Pollo
Wednesday: Healthy Carbonara
Friday: Tomato Soup & Grilled Cheese
Sunday: Jalapeno Poppers Buffalo Chicken Mac & Cheese
Over the past few weeks I’ve noticed that we’ve been wasting a lot of food. As much as I hate leftovers, I’m going to start embracing them. I’d much rather make a fresh, new dish to enjoy. It just isn’t realistic, nor is it budget friendly.
