Carving pumpkins or squash? Not sure what to do with the goopy gunk and seeds? Set them aside in a bowl. Finish carving your pumpkins, and then make yourself a tasty treat.
Once the seeds have dried out. Return them to a mixing bowl. Heat the oven to 300 degrees Fahrenheit. Lightly coat the seeds in EVOO. Sprinkle them with seasoning salt, garlic powder and ground cayenne pepper. Don’t overdo the EVOO or seasonings. How much you use depends on how many seeds you have. In my case I used between 1 to 2 tbsp EVOO and about 1/8 to 1/4 tsp of each spice. Use your judgement. Just don’t overdo it.
Evenly spread out the coated seeds on a baking sheet and place in oven. Cook for 30 to 45 minutes. Flip and move around the seeds every 5 to 10 minutes.
Once you notice the seeds have a very nice golden brown colour. Remove and let cool. Seal in a air tight container.
