I’m a pasta lover! I always have been. Lasagna is one of my all-time favorite meals. There’s nothing better than a hearty lasagna, in my honest opinion. That being said I very seldom make a homemade lasagna. Why? I’ve always thought that they’re too much work to make from scratch. I need simplicity and ease in the kitchen. Gone are the days where I could come home from work and spend endless hours in the kitchen preparing dinner. Let’s face it the kids just don’t have patience for that.
Tonight I made a crock pot turkey lasagna. It was delicious! My husband even declared it his new favorite lasagna. The meal required minimal prep work on the stove and slow cooked in the crock pot for 3 hours once assembled. Easy peasy.
1.5lbs of ground turkey
6-8 lasagna noodles (uncooked)
28oz can of crushed tomatoes
15oz of your favorite pasta sauce
1 medium onion (chopped)
1 tsp onion powder
1 tsp Club House Garlic Plus
2 tsp Italian seasoning
1 cup ricotta cheese
1 1/2 cups shredded mozzarella cheese
1/2 cup parmigiana cheese
salt and pepper (to taste)
Brown ground turkey and onions in pan. Season with salt and pepper to taste. Mix together tomatoes, sauce, garlic plus, onion powder and Italian seasonings in a separate bowl. Once turkey is cooked through, pour sauce into pan. Simmer uncovered 5 minutes. Mix together 1 cup ricotta cheese and 1 cup mozzarella cheese, set aside.
Spoon 1/3 of the sauce into bottom of crock pot. Top with 3 lasagna noodles. Break them in half. Do what you need to make it work. I layered some pieces. Spread half of the ricotta mixture over the noodles. Again it doesn’t have to be perfect. Spoon over 1/3 of the sauce. Repeat another layer of noodles and remaining cheese mixture. Pour remaining sauce over top of the cheese.
Cook on low 3 hours. During final 20 to 30 minutes add final layer of cheese (1/2 cup mozzarella and 1/2 cup parmigiana cheese).
If you don’t have crushed tomatoes (I know I didn’t tonight)… Grab a can of diced tomatoes and crush in a blender.
Alternatively you could make this recipe with ground chicken, pork or beef.
