Baked Potato Soup is one of my favorite soups. It can take some time to prepare; washing and peeling 5lbs of potatoes. Let’s face it – if you’re a working parent, parent of young children or both… you may not always have time for all the prep work.
That’s where Crock Pot Hash Brown Soup comes into play. It’s a simple spin on the Baked Potato Soup. Easily prepared, and delicious.
1 bag of small bag of hash browns
1 can cream of celery soup
1 can cream of chicken soup
6-8 cups of chicken broth (We like our soup thick, so I only added 6 cups. Adjust if need be.)
salt and pepper to taste
1/2 tsp club house garlic powder plus
1 cup sour cream (I only added 1/2 a cup)
Combine cream of celery and chicken soup, chicken broth and seasoning. Add to crock pot. Stir in hashbrowns. Cook on low 6 to 7 hours. During last hour, add in sour cream.
Serve. Top with shredded cheddar cheese and crumbled bacon.
