Today is the first time that we have absolutely nothing to do…. And trust me on this one — I sure as hell am not complaining!! While I love keeping busy… I don’t like keeping busy to the point that I can’t wrap my head around what’s going on. Like the past 5 weekends have been packed with seeing family, going away, etc. I mean don’t get me wrong I love to spend quality time with the family, and I cherish every moment that I do spend with them — but there is a point where it is like enough already — I just want to spend some good quality alone time with my hubby already!!! Haha. Soooo today that is what we are doing!

I can’t get over the fact that it is almost 11 in the morning, and I am still sitting here in my jammies — I haven’t showered or even started getting ready for the day… And James in the kitchen cooking me up a yummy brekkie! I haven’t gotten to do this in months!!! It is awesome.

This afternoon, we had originally been planning to snuggle up and watch movies… But that only became the plan because last night when I checked the weather it was 70% chance of rain all morning and 60% chance of t-storms all afternoon. However, this morning when I checked the weather — it is now a 20% chance of rain all day and it is going to be partly cloudy. Bah, got to love the f-ed up weather these days! So rather than watching movies, we will probably end up just chilling on our deck, sipping on Mojitos and other yummy summerey drinks. Oh, and tonight for dinner I plan to cook up a yummy Chicken Marsala served over Spaghettini (recipe below).

Chicken Marsala with Spaghettini

INGREDIENTS
1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry
1 pound Spaghettini or any other pasta of choice

DIRECTIONS
In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
In a large skillet, melt butter in oil over medium heat. Cut chicken into smalll square pieces. Place cut up chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.
While everything is simmering… You can start cooking your spaghetti. Boil it until it is al dente. Drain off the water and serve it in a casserole dish. Pour the marsala over the pasta. Let stand for 10 to 15 minutes so that the pasta can pick up the flavours. Serve.
Oh and speaking of Mojitos. I had never tried one until this past week when my friend, Natalie introduced them to me. We had been speaking about how she enjoyed a Mojito while watching The Hills (awesome show, by the way!) on Monday night. I had always been curious to try them, but never had. I don’t know why but the thought of mint in my drink was kind of sketchy to me – LOL. Anyway, after watching the steps on how to make a Mojito on http://www.bacardimojito.com — I HAD TO TRY ONE!! And I am so glad I did. It was such a refreshing drink!! It is definitely on my list of favs now. 🙂

Anyway, enough of my babbling — I should get going to enjoy my day of nothingness! Today is going to be a good day, I can just feel it!
